Hey there! So happy to be back sharing with you. Its been a hot minute, I love Substack, but I struggle to set aside the time to write long form.

I’d been thinking about the design of these cookies for days. My best creative ideas come at Fajr (sunrise prayer) and so at 4am I was designing this cookie.

My most popular post on Instagram is a bounty cake, two layers of toasted coconut sponge with a creamy coconut mix in the center and coated in a thin layer of chocolate ganache and a thicker layer of set milk chocolate. An absolute treat.

But everyone loves a cookie. A coconut chocolate inspired cookie surely takes the biscuit right!

These are two layers of rich, soft chocolate cookie filled with vanillery, creamy but stable coconut filling with dark chocolate drizzle and a sprinkling of flakey sea salt.
